Ingredients
  1. 4 cups tomato juice
  2. 1/3 cup chopped onion
  3. 2 tbsp. brown sugar
  4. ¼ cup chopped celery leaves
  5. 1 tsp. salt
  6. 2 small bay leaves
  7. 4 cloves (whole)
  8. 2 envelopes plain gelatine
  9. ¼ cup cold water
  10. 3 tbsp. lemon juice
  11. 1 cup diced celery
Instructions
  1. Combine tomato juice, onion, celery leave, salt, sugar, bay leaves and cloves.
  2. Simmer 5 minutes.
  3. Strain.
  4. Soften gelatin in cold water; dissolve in hot tomato mixture.
  5. Add lemon juice.
  6. Chill until partially set.
  7. Add celery.
  8. Pour into mold.
  9. Chill until firm.
  10. Unmold on curly endive.
  11. Centre the ring with bowl of mayonnaise.
  12. Garnish with avocado slices brushed with lemon juice.
  13. (Mom always added a can of shrimp drained to cooled mixture before it set.)
