Ingredients
- 4 cups tomato juice
- 1/3 cup chopped onion
- 2 tbsp. brown sugar
- ¼ cup chopped celery leaves
- 1 tsp. salt
- 2 small bay leaves
- 4 cloves (whole)
- 2 envelopes plain gelatine
- ¼ cup cold water
- 3 tbsp. lemon juice
- 1 cup diced celery
Instructions
- Combine tomato juice, onion, celery leave, salt, sugar, bay leaves and cloves.
- Simmer 5 minutes.
- Strain.
- Soften gelatin in cold water; dissolve in hot tomato mixture.
- Add lemon juice.
- Chill until partially set.
- Add celery.
- Pour into mold.
- Chill until firm.
- Unmold on curly endive.
- Centre the ring with bowl of mayonnaise.
- Garnish with avocado slices brushed with lemon juice.
- (Mom always added a can of shrimp drained to cooled mixture before it set.)
