Ingredients
- 1 cup white sugar
- 1/2 up white syrup
- 1 cup slightly salted peanuts
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tsp. butter
Instructions
- Use microwavable bowl (a measuring cup for example) that will hold about 4 cups. I used a glass 5 cup measuring cup I use for mixing cakes.
- Grease cookie sheet.
- Place 4 greased knives around the edge of the cookie sheet. Resting the blade portion toward the centre of the sheet and the handle rested on the edge. You will pour the syrup over the knives. When the syrup hardens the knives will help lift the hard candy off the bottom of the cookie sheet.
Preparation procedure
- Have everything measured out and ready as this hardens quickly and you need to add ingredients quite fast. You will see as you go.
- Mix sugar and syrup in measuring cup. Mix just a little to blend (it will be hard).
- Microwave for 4 minutes on high.
- Remove from microwave, add peanuts and mix into syrup (will start to harden so only a few mixes necessary.
- Microwave for 3 minutes on high.
- Remove from microwave, add butter and vanilla, blend into syrup, again.
- Microwave for 1-1/2 minutes on high.
- Remove from microwave and mix in baking soda (it will bubble and fizz). It will be hardening.
- Pour quickly over knives onto cookie sheets and working quickly spread as thin as you can with the back of a spoon or spatula. It will harden quickly so be aware.
- Let harden completely about 1/2 hour.
- Lift up knives and the syrup mixture will lift and begin to break.
- Place large pieces in plastic bag and tap with back of a knife to make smaller pieces.
