Ingredients
  1. 4 medium peeled and diced potatoes (3 1/2 cups)
  2. 2 stalks diced celery
  3. 1 medium finely chopped onion
  4. 3/4 cup sliced deli ham or diced cooked ham
  5. 3 1/4 cups chicken stock or water
  6. 2 tablespoons powdered chicken soup or bouillon granules
  7. 1 teaspoon ground white or black pepper
  8. 5 talbespoons butter
  9. 5 talbespoons all-purpose flour
  10. 2 cups fat free cream or milk
  11. 2 stalks of leeks chopped - white part only (optional)
Instructions
  1. Combine the potatoes, celery, onion, ham, leeks and chicken stock in a stockpot.
  2. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes.
  3. Stir in the powdered chicken soup, salt and pepper. (If eating immediately got to instruction 5.)
  4. (The soup can be frozen at this point. Thaw and then continue with these instructions.)
  5. In a separate saucepan, melt butter over medium-low heat.
  6. Whisk in flour with a fork and cook, stirring constantly until thick, about 1 minute.
  7. Slowly stir in milk as not to allow lumps to form until all of the milk has been added.
  8. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
  9. Stir the milk mixture into the stockpot, and cook soup until heated through.
  10. Serve immediately.
